Description

Kilchoman STR Cask Matured 2019 Edition is an Islay Single Malt Whisky, distilled in 2012 and bottled in 2019 at 50% ABV. This limited edition release of 14,500 bottles was matured in 43 STR (Shaved, Toasted, and Re-charred) red wine hogsheads. The STR process, developed by Dr. Jim Swan, involves shaving the inner surface of used red wine casks to reduce bold wine flavors, then toasting and re-charring them over an oak fire to caramelize sugars and introduce vanilla and spice notes, while removing harsh tannins. This method balances fruit, oak, spice, and maritime peat smoke, resulting in a complex and flavorful whisky that is non-chill filtered and has a peat level of 50 ppm.
