Nose
Soft, approachable nose of salty smoked haddock with aromas of coal, tar, charcoal, and soap. Lemon zest, peat, smoke, with hints of linseed oil, hard candy, and a fresh sea air.
Palate
Sooty, minerally, with biting smoke and a little melon. Powerful with tarry, leafy, coal ash, caramel apple, and driftwood notes. Soft and smooth, sweeter than expected, smoky with a little salt.
Finish
Long, peaty, and pleasing, with a seltzer-type feel and lingering water-doused fire flavor. Dry with light cedar smoke, damp peat smoke, and charcoal. Very smoky and lightly drying with an appetising salty aftertaste.
