Nose
Deep and smoky, with notes of peat smoke, sea spray, citrus zest, vanilla, and light oak. Hints of spice, sweet malt, ash, white pepper, sea salt, and a distinct oyster note. Some barley sugar, caramel, hoisin sauce, peanuts, smoked pork, and a touch of raisin. Waxy, sweet and fruity, with apricots, peach, bitter lemon peel, and a tinge of menthol and tobacco.
Palate
Full-bodied and balanced, with a medium texture. A blast of peppery peat, savoury and vegetal, with smoked pork, black pepper, salt, earth, ash, clay, herbs, lemon, and burning grass. Sweetness from caramel, malt, dried fruit, and warming spice, with refined oak. Some sherry sweetness, cooked strawberries, and toffee. Massively oily, with dank earthy peat, cracked black pepper, and a buttery sweetness. Pepper-crusted smoked bacon, charred oak, kelp, and a light medicinal balm note.
Finish
Long and warming, with lingering smoke, maritime notes, soft spice, and gentle oak. Medium-length and peaty, with ash, brine, pepper, and more smoked pork. Turns sweet towards the end with subtle pear, honey, and a hint of vanilla. Black pepper, dank, oily, earthy peat, and a nice salted root vegetable note.
