Nose
Immediate raisin fruit and smoke from a recently lit fire or Tudor chimney, damp yet welcoming. Linseed oil, wax crayon, pine resin. Soft fruits (redcurrants, elderberries, over-ripe red apples), creamy butter and caramel. Faint old smoke and damp, country churches. Earthy peat, beautiful wood smoke, sweet sherry, rich dark fruits (cherries, plums, bacon wrapped figs). Fruit cake, dried fruits, orange peel, marzipan, candle wax, sea shells, old rope, eucalyptus, smoked meats. Medicinal with iodine and camphor.
Palate
Initially hesitant, then full, cooling, sweet. Smooth, rich and full-bodied. Sweet and tonguecoating, with rich bitter-sweet molasses, treacle toffee and toffee apples. Tobacco, lemon marmalade and pepper, with bitter herbs. Cloves, juniper berries. Thick and oily mouthfeel. Sweet and earthy and smoky. Fudge, chocolate, mesquite, barbecue ribs, brown sugar, sea salt, almonds, hazelnuts. Big peat, smoke, smoked kippers, fire, half burnt cinders, iodine, sweet sherry, malty notes. Honey, ginger, salt, leather, caramel with coffee and sticky pudding.
Finish
Complex and deep. Fabulous charred oak and fresh oak smoke. Sweet, perhaps baked apples, with creamy coffee and salted caramels. Long, on tobacco, walnuts, chocolate, coffee, samphires. Quite a lot of spice forward (pepper, liquorice, ginger), big tobacco smoke, some bitterness quickly on orange peels and raw cocoa powder, sea water, drying. Long finish. Earthy peat, barbecue smoke, smoked salmon, brisket, leather, earth, pepper, sea salt. Endless after campfire smoke, iodine, sweet burnt bacon. Smoked vanilla fudge with attractive earthiness and charcoal.
