- Nose
- Lively apricots, peaches, stone fruits and jams. Peach cobbler, vanilla and cinnamon. Perfectly balanced peat, medicinal but elegantly so. Oily and salty like sea air. Wet wood, earthy like wet leaves beneath ferns. Fresh cut grass after rain. Dry fruity aromas of white wine. Mild peat, soft sea spray, delicate citrus, caramel, vanilla, white pepper, grassy, slightly fishy and salty. Pineapple and mango.
- Palate
- Spicy fresh bitter oak. Medicinal aspects more pronounced, fuses with bitter spiciness. Stewed peaches on a graham cracker. Malty biscuits. Sweetness, syrup from canned peaches and mandarin oranges. New rubbery. Super smooth mouthfeel, peppery, salty and peaty. Salt and iodine. Cinnamon and ginger. Decisive and sharp, whiff of pepper and ginger, fiercely maritime, seawater and seaweed on smoked oysters, cinnamon, lemon, pineapple, pear, touch of licorice, impression of sugar paste. Medium-bodied, smooth and spicy. Peat smoke more distinct, fruit elements like lemons and mangoes. Liquorice and ginger develop, touch of seaweed. Vanilla, sweet peat, some spice; pepper and cinnamon, tinned fruits in own syrup with vanilla custard, well-tempered peat smoke/creosote, nutty but definitely sweet, vanilla pastries, toasted almonds.
- Finish
- Long spicy dry bitter fresh oak. Wet wood burning smoke. Grass juice. Sweet sweet syrup from canned fruits. Licking new rubber. Zest and rind. Sweeter, thick and honey-like caramel sauce. Relatively long finish, but flattens out a bit too soon. Slightly metallic. Medium-long finish of liquorice, pineapple, dull embers, pastry, salt. Medium length and sweet with light honey flavours and accompanied by notes of seaweed. Smoke less pronounced, turned into ashes. Long, sweet and peaty a little mossy and leafy/green in places.
