- Nose
- A magnificent sherry and peat combo with exceptional tarry notes, camphory and resinous notes, sea water, seaweed, fresh mint, verbena, soy and plum sauces, coffee, toffee, slightly burnt caramel, brandy-soaked prunes, oranges, and chocolate. Ripe orchard apples, dried apricots, and dark cherries entwined with warm cinnamon and fresh thyme; underpinned by rich oak from the sherry cask. [3, 5, 6]
- Palate
- A big, fat, oily, and hugely concentrated attack with bitter chocolate, prunes, and peat. Loads of spices including cinnamon, cloves, heavy liquorice, and paprika. Also espresso coffee, armagnac, drying tannins, grape pips, and orange liqueur. Dominant sherry influence with layers of dried figs and dark chocolate, hints of leather and roasted nuts, finished with a silky, full-bodied texture. [3, 5, 6]
- Finish
- Long and very drying, but not unpleasantly so, mostly on orange liqueur with infused liquorice and roots, possibly ginseng, and old plum brandy. Rewarding, with smoky peat and sweet spice, maintaining a balanced, evolving character. [3, 5, 6]
