Maltiply Tasting Profile
Nose
Baked apples and lemon zest with a little charred Oak, ground grey pepper, and cherry Wax Lips around the edges. Distinctly maritime with sea breeze, wildflower honey, bee pollen, and nectarine.
Palate
Really pops with a cracked black pepper opening. Notes of heather honey, shortbread cookies, white peaches, ripe apricots, and bright orchard fruits. Full and expressive, with layers of stone fruit, raisins, and caramel balanced by spice and a touch of salinity.
Finish
The fruit lingers for a long time balanced by the cracked black peppercorns. Long and warming, with lingering dried fruit, spice, and a gentle maritime dryness, and a gentle peat presence that builds slightly to harmonize with a lingering, citrus and orchard fruit finish.

The orchard and stone fruit alongside cracked black pepper sounds appealing, and that maritime dryness gives the sweetness a useful edge. I’d put this toward the fruit-and-spice end of the spectrum rather than a simple sweet dram.

The oak seems more like a small accent than the main event: there’s only a little charred oak on the nose, while orchard and stone fruit, pepper and maritime notes take the lead. That makes me wonder how much the sherry cask shapes the character here; the notes point more strongly to fruit, spice and a touch of salinity than to an obvious oak imprint. Still, the long, warming finish and its gentle maritime dryness make for an appealingly layered picture.

The lemon zest and sea breeze keep the sweeter fruit feeling lively, while the pepper gives it a firm edge. More full-on than my usual easygoing pick, but the fresh, maritime side appeals.
