Nose
Rich baked fruit aromas - sultanas, prunes and figs. A little peat smoke on the edge. With water, more sweetness, treacle toffee, rich fruit cake, charred oak notes, cinnamon, manuka honey, freshly brewed coffee, calvados, a touch of sherry, cut fennel, and pear character.
Palate
Sherry wood with rich fruitiness and a burnt, toasted malt edge. Hints of liquorice. With water, smoky notes, oily woodiness, rich burnt fruit flavours. Full-bodied and rich with notes of rum, buttery fruitcake, spice, an earthen note, soft peat, and wistful smoke.
Finish
Subtle smoke and sherry. Long with oak developing and a touch of cereal sweetness. Medium-long length with definite soft earthy peat smoke. Dried red apple, currants, dried figs, baking spices, soft old leather, liquorice, old dark rum, and dried fruit underneath.
