Description

Midleton Dair Ghaelach Grinsell's Wood is a Single Pot Still Irish Whiskey from the Midleton Distillery, part of the distinguished Dair Ghaelach (Irish oak) collection. This limited edition release, first launched in 2015, is a result of a six-year exploration into using native Irish oak for whiskey maturation. The whiskey is initially matured for 15 to 22 years in American oak bourbon barrels before being finished for approximately ten months in virgin Irish oak hogsheads. The oak for this particular expression was sourced from 130-year-old trees in Grinsell's Wood within the Ballaghtobin Estate in Co. Kilkenny, Ireland. Each bottle can be traced back to one of the ten specific trees felled in April 2012, with the staves crafted in Spain and then returned to Midleton for coopering. This non-chill filtered, cask strength whiskey showcases the unique influence of Irish oak, imparting rich, complex flavors that balance the classic spicy pot still character with notes of vanilla, caramel, and chocolate. It was released in select markets including France, Germany, Ireland, South Africa, and the UK.
