Nose
Green and vegetal in an oddly captivating way. With time it turns delightfully pastry-like, reminiscent of a freshly baked Danish dusted with icing sugar. Also salt water, oils, lemon peel, mineral, wet pebbles, a little green apple and sweet biscuit.
Palate
Full bodied, creamy and citrus-led. Subtle notes of pencil shavings, toasted oak and chocolate, lifted by a small pinch of salt. Good texture, sea salt flakes, squares of good quality chocolate, some ginger biscuits, lemon oils, with a bit of warm chili spice.
Finish
Long. Fresh citrus carries through, finishing on bright notes of lemon and honey cake.
