Description

A distiller and independent bottler, founded in 2013 as the Black Isle Whisky Company in 2013 by Simon and Philip Thompson. It opened the Dornoch distillery in 2016, producing its own single malt whisky and gin which it markets using the Thompson Bros brand name.

Nose
A big hit of honey, caramel with sea salt & pineapple flan, subtle coastal notes, candied citrus peel, toasted marshmallow, hints of maple syrup. Runny honey with a complex savoury undertone (miso?), Orkney fudge, baked apples and brown sugar.
Palate
Smooth and tangy with a balanced opening. Toasted fruit cake, whipped latte foam, caramel topped choux pastry, warm brioche, saltwater taffy, crispy ice-cream cones, dark honey, barbecue smoked meats. Fresh orange peel, dried figs, Chinese ginger root in syrup and toasted brioche.
Finish
Full of sticky toffee pudding, with a final hint of fresh chocolate mint. Rich lingering aftertaste.
