Produced at the Pearse Lyons Distillery - situated in the transformed St James' Church in Dublin's Liberties where nine members of the Lyons family are at rest - this 5 Year Old single malt is bottled straight from the cask, crafted with the family's skillful passion. This Cask Strength release was launched as a travel exclusive to The Loop at Dublin Airport and is limited to 1,000 individually numbered bottles, hailing the first release from Pearse Lyons Distillery that is wholly their own spirit. The notes lean bright and fruity, with citrus and orchard fruit alongside clove spice and oak; that gives the lighter nose and palate some definition. I like that the cask detail is specific without needing to assign each flavour to the wood. The medium-to-long finish sounds like a satisfying close, though the overall character remains on the lighter side.
