Nose
Sea salt mixed with light peat smoke, citrus, dried fruits (figs and dates), antique leather, wet earth, briny, slightly tarry, lemon and orange glazed scones.
Palate
A masterful balance of strength and fineness, with soft sweetness of caramel and honey, robust smokiness, dried herbs, black pepper, coastal notes like a beachside clambake with grilled shrimp, clams, scallops, lemon, charred fennel, and a dirty, tarry element.
Finish
Long and memorable, a fusion of smouldering peat and salty sea breeze, fading to delicate sweetness with a gentle oak note, fennel, rosemary, sweet and savory grilled scallops and shrimp, charred bread, pear jam, and slightly mineral.
