Description

An Islay distillery that developed a cult status following its closure by Distillery Company in 1983. Originally only providing fillings for blends, its single had become hugely sought-after by the turn of the 21st century, so much so in fact that it was re-opened again by Diageo in 2024. One of Scotland's most prolific whisky companies, Signatory Vintage, founded as an independent bottler by Andrew Symington in 1988, bottled this 35 year old Port Ellen. It was distilled on 2nd September 1982 and bottled on 31st July 2018 for their 30th Anniversary, drawn from a single refill Sherry butt.

Nose
A complex aroma of summer seaside seafood barbecue, grilling shellfish over charcoal, and charred lemons, complemented by notes of wet chalk, diesel, Kalamata olives, peaches, yellow plums, honey, lime, and waxy paraffin. Hints of sea spray, eucalyptus, mild coal smoke, gun oil, and smoldering candle are also present.
Palate
A thick mouthfeel with a continuation of the nose, featuring shellfish over charcoal grill, grilled shrimp, and intensifying smokier notes. Sweet and fruity peaches lead to peaty and tarry elements, with seaweed, brine, iodine, and herbal notes like sage and camphor. Further fruitiness includes mango, sweet grapefruit, vanilla, olive brine, and liquorice, alongside buttercream, rich toffee, honey, almonds, oats, light oakiness, firm ash, and minerality.
Finish
Incredibly long, with lasting charcoal grilled shrimp and smoldering charcoal. Sweet and smoky, slightly peppery with a hint of herbal bitterness, a big pop of earthy peat smoke, lemon, grapefruit, strong tea, seawater, iodine, fresh-cut grass, and some tannic bitterness. It is tingly, astringent, with some wood on the tongue and a notable minerality.
