Nose
A wonderfully smoky character alongside burnt brown sugar and cured meats; sweet leather with gentle peat smoke and salted caramel; smouldering coal and flamed orange peels, biscuity malt, dried pineapple, and delicate notes of crumbly vanilla fudge; old books, hay, lime zest, oyster shells.
Palate
Full of mocha/cocoa, BBQ smoke and stewed dark fruits; damp ash, charred oak and a burnt sugar sweetness; coastal peat and exotic fruit mingle, bringing a balance of salted papaya and fresh charcoal; rich oak char follows, with hearty notes of cacao and wintery spice; nutmeg, hazelnut, milk chocolate, salt, brine, fried chicken skin, orange peel.
Finish
Goes on and on with rich spices, peat and treacle; hints of coffee and candied ginger with a sweetly smoked style; a long finish with smoked salt and spiced fruit loaf lingering beside earthy notes of mocha and bonfire smoke; weak end, a little bit spicy (pepper), sweet, lemons, some honey, and seaweed.
