Description

Redbreast is an Irish single pot still whiskey, which started out in the early 1900's. Produced in Dublin by W & A Gilbey; a wine merchant and bonder who received their spirit from the famous Bow Street Distillery (home of Jameson's whiskey). The whiskey takes its name from one of Gilbey's chairmen, nicknamed "Redbreast" due to his penchant for bird watching. Production moved from Dublin to Cork. This Redbreast 12 Year Old Cask Strength is made from a mash of malted and unmalted barley, triple distilled in copper pot stills, and matured in a combination of bourbon seasoned American oak barrels and Oloroso sherry seasoned Spanish oak butts. It is bottled at cask strength and without chill filtration.

Nose: Complex spicy and fruity aroma with toasted wood notes, vanilla, tannic oak, berry medley, faint caramel, citrus, green apple, dried fruits (sultanas, pineapple, mango, banana, apricot, peach), butterscotch, toffee, sweet spices, thyme, rosemary, nutmeg, aniseed, clove, dark fruits (red and blackcurrant, blueberry), shortbread, dark cherries, sweet custard and cream, flaky pastry, tart lemon filling.
Palate: Full-flavored and complex, silky smooth with a harmonious balance of spicy, fruity, sherry and toasted notes. Honey, butterscotch, spiced green apple, citrus notes, sweet vanilla, touch of spice, creamy mouthfeel, bright and fresh with a 'sherberty' quality, tart green apples, pepper, stone fruits, almonds, peaches, cherries, orange peel, danish shortbread cookies, caramel, malt, red berries, banana, dill, almond nuttiness.
Finish: Satisfyingly long, complex flavors linger, baking spices, gentle cinnamon, rich complexity of spices and fruit, slowly fading through sweet butterscotch to barley, bold tannins, more pepper, sticky grain notes, long and lightly wood finish of caramel, butterscotch, single pot still character, allspice, malt, red berries, banana, vanilla, almonds, subtle dill, tobacco, oak tannins, slight dryness.

The appeal here is how the fruit and spice carry through rather than dropping away at the finish. Green apple and toasted wood on the nose lead into a silky palate where spiced green apple, butterscotch and malt sit alongside sherry and toasted notes. That balance suits a preference for spice and malt without making either the whole story. The finish is described as long, with spices and fruit slowly giving way to butterscotch, barley and oak tannins, then a slight dryness. I like that gradual shift: the sweetness has a counterweight, and the length gives the quieter barley and oak notes room to register. It is a layered character, particularly appealing if the finish matters as much as the first impression.
