- Nose
- Decadent aromas of sultanas, singed oak, leather, dry spices, wood smoke, exotic fruits, dates, and walnuts. Bit-O-honey, sugar babies, malt balls, and fudge. Clean, nose-wrinkling vibe of dove hand soap bar, with an explosion of cardamom and lemon grass.
- Palate
- Orange honey stick, hazelnut brittle, tropical fruit flavored soft fudge. Ultra ripe figs and candied pecans. The Redbreast spirit comes through with a touch of bitter wood, like roasted green bell pepper flavored with celery salt, flowing into huge tannic wood notes. Full-bodied and very rich, with intense yet soft tannins, mahogany wood, incense, wild red berries, creamy vanilla, earthy cinnamon, caramel, fudge, and Christmas cake.
- Finish
- Very long, with a nuttier profile including walnuts and roasted hazelnuts, leading to some citrus peel notes. The tannins are softer, more mellow and caramel-like oakiness. Still very creamy and rich, almost buttery. Deeply sugary sweetness with a fascinating, playful, bitter-ish edge. Vanilla, milk chocolate, and a lovely minty honey.
