Nose
Warming notes of oranges and lemons, with big notes of salt and peat smoke. Also funky blue cheese notes with swirls of wispy smoke, banoffee pie and vanilla. Coastal sea spray with lashings of fresh lemon juice.
Palate
Intensely over brined fish and a lot of chilli heat with more light smoke touches. Creamy/milky, menthol/eucalyptus-like peat, slightly phenolic and medicinal, sea salted and honey-roasted smoked nuts, citrus lime juice. Flambéed orange peel, rich earthiness, puffs of drifting peat smoke and salty tang.
Finish
A long and lingering smoked finish is dominant but there is a tart cooking apple note. Brine, pepper and smoke. Sweet with soft spices.
