Nose
Mellow, inviting, full of sweetness and rye. Pithy orange, caramel, vanilla syrup, maraschino cherry, cotton candy, fresh, clean and herbal rye. Subtler notes of burnt banana cream pie, orange-tinged chocolate, polished oak, warm cinnamon, vanilla bean, and powdered ginger. Fresh toast, pungent dill & fennel, cherry pit, apricot.
Palate
Slightly airy mouthfeel with juicy citrus, sweet cherry, and caramel. Breadier, toasted and peppery rye, toasted almonds, baker's chocolate. Strong but balanced oak and spice notes, polished and shellacked boards, cinnamon, candied ginger, sweetened clove, fine ground pepper. Smooth and layered with caramel, toffee, baking spice, dried fruit, seasoned oak. Rye grain spice softened by long aging, showing more herbal depth, citrus oil, and sweet oak integration. Milky consistency, tannic with green pepper, sweet leatheriness.
Finish
Longish and warm with nicely tannic oak, toasty rye grain, vanilla bean baking spice, and an astringent hint of barrel char and cherry cough syrup. Lingering oak, gentle spice, vanilla sweetness, and a slightly herbal, drying fade. Cherry, cut fennel root, tannic leather, shortcake.
