Nose
Soft caramel and vanilla, with hints of rye spice, dried orchard fruits (apple, pear), a subtle floral quality, aged oak, maple syrup, and a clean, mineral freshness. Some notes of dried apricot, lemon curd, and tropical fruitiness (pineapple, banana) with grainy sweetness and woody aromas.
Palate
Remarkably smooth with initial sweetness of caramel and toffee, giving way to baking spices (cinnamon, nutmeg, white pepper from rye). Dried fruit notes (apricot, golden raisin) persist. Subtle oak, creamy texture, and delicate herbaceous notes. Buttery fruit marmalade, honey, and a subtle coffee note with a medium body. Unctuous, syrupy, and a glorious oiliness with iodine and deep caramel.
Finish
Medium length, clean, and pleasantly warming. Sweet oak and caramel linger, fading into a soft, dry spice. Persistent vanilla and a hint of charred wood. Spicy ginger cake warmth and lasting cedar woodiness with a mild bitter edge and dry oak.
