Description

Since 2020, the French Version, a range dedicated to exceptional French spirits, has been meeting producers across the country and showcasing their expertise. In 2023, the French Version inaugurates a new cycle dedicated to various stages of whisky production. Named Cerealis, the first episode of this cycle highlights the iconic cereals used in whisky production worldwide, featuring four versions crafted from corn, rye, barley, and wheat. This Secale expression is made from a blend of 51% rye and 49% malted barley, fermented for over 10 days, and aged in new Jura oak casks.

Nose
Lively, elevated. Evoking citrus fruits (clementine) initially, the aromatic palette then sails towards spicy (cinnamon), smoky (tea), and crispy biscuit notes. Then, a fine and elegant woody essence emerges. The second nose is harmonious and cereal-like.
Palate
Direct, airy. During the mouthfeel, lightness combines with freshness, illustrated by herbaceous flavors (oregano, thyme). Next, spices (ground coriander, star anise, paprika) join in, soon softened by melon notes.
Finish
Warm, vaporous. The beginning of the finish is roasted (coffee) and chocolatey (dark). In the aftertaste, fruity indulgence (raspberry) follows slight herbaceous notes (tobacco). Evoking dark chocolate, the very end of the finish extends smoothly.
