Nose
Sweet and delicate, with notes of raspberry coulis, baked apples, oranges, berries, and waxy notes. Subtle sherry and port influence (plums, strawberries, fragrant raspberries). Touches of paraffin, damp cellar, whiffs of brine, and soft peat smoke. Mustiness reminiscent of dunnage warehouses and bung cloth.
Palate
Initially smooth and syrupy, opening up to notes of sultanas, bananas, Demerara sugar crystals, and red fruits like plums, raspberries, strawberries, and caramelized oranges. Earthy, dark, rich, and complex with caramel, port notes, sherry notes, and white sugar. Spicy notes of ginger, cinnamon, and liquorice. Rich and oily with salted caramel and stewed fruits.
Finish
Medium long, on crystallized fruits, oak, and brine. Warm, lingering, with more pronounced peat and an ashy note. Caramel and sugary sweetness. Coastal influence with saltiness, hints of barley water, grassy notes, and dried citrus.
