Nose
A fabulous old-sherry arrival with fresh berries, blueberry, blackcurrants, rancio, dunnage floors, oiled jute rope, green over-ripe fruit, well-aged balsamic, grape musk, dried herbs, old candle, beeswax, soot, pine, juniper, hibiscus, and oyster shells. Also notes of soft sponge cake, syrup, minerality, wet slate, blood orange, calves leather, clarified butter, beeswax, madeleines, ripe fallen fruit, coconut, marshmallow, almonds, and Springbank brine character.
Palate
Early greengage sourness, lemon thyme, salt, pine resin, blueberry, coal soot, old warehouses, metallic graphite oil, herbal liqueur, and hibiscus. Also blood oranges, wax, polished wood, nutmeg, Yorkshire fat rascal with salted butter, marmalade, glacé cherries, Parma violets, tinned peach syrup, exotic fruits, complex wood spices, brine, and coconut.
Finish
Long and beautifully balanced with sweet air-dried ham, faint stewed fruit, rancio, herbal notes drifting towards green tea, spent fireplace, and fennel seed. Satisfying and lingering.
