Nose
A complex and aromatic nose with sweet notes of honey, vanilla, apples, peaches, pears, and dried fruits like apricots and sultanas. These are balanced by a rustic gameyness, subtle peat smoke, and maritime influences including brine and sea air. Hints of orange peel, nuts, white chocolate, and mint can also be detected, along with some grainy, oatmeal, and sour yoghurt notes.
Palate
Oily and full-bodied, the palate offers a rich sweetness of honey, dark caramel, and toffee, intertwined with dried fruits (raisins, figs, apricots) and a subtle fruitiness from rum cask influence. There's a distinct brininess, light peat smoke, and a peppery spice from oak, cinnamon, cloves, and ginger. Notes of smoked cheese, salted butterscotch, and dark chocolate add further depth.
Finish
Long, warm, and complex, with lingering sweet maltiness, dried fruit notes, and persistent salty, maritime flavors. The subtle peat smoke fades slowly, giving way to oak spices, a subtle dryness, and notes of dark chocolate, dried fruits, and a touch of oak. A bittersweet and peppery tingle can also be present.
