Nose
Fresh and sweet, with loads of sweet fruit like pineapple, starfruit, tangerines, pear drops, and peaches. Toffee apples, bran muffins, French butter biscuits with milk chocolate. Lightly creamy, beeswaxy, with subtle peat smoke. Cool floral notes of misty bromeliads and orange blossoms. Hint of sherry with golden raisins and aged balsamic. Herbaceous, with not fully dry hay.
Palate
Thick texture. Arrives sweet and juicy, with tropical fruits, blossoming flowers, honeycomb, and a hint of salt. Hibiscus tea and lavender. Rich honeycomb and beeswax, soft earthy peat smoke and dunnage. Darjeeling tea. Nutty notes of roasted almonds and sesame seeds. Salt intensifies to brine. Crisp apples and flamed baking spices. Classic minerality.
Finish
Medium-long, complex and gentle. Smoke towards smoldering peat and machine shop. Candied tropical fruits, canned pears, apple cider, tangerines. Pizza crusts drizzled with olive oil. Aloe vera and ferns. Long, bready, and saline with woodsmoke and caramel.
