Nose
immediately fresh and coastal, lemon zest, oysters, crab legs and lobster pots, potted shrimp in butter, after a while some lychee and mango, pebble beach, a little tar and wet rope.
Palate
bigger with the wet tar and bonfire smoke, ash, bbq lemons, icing sugar, Arbroath smokies, panna cotta, overripe and wrinkly apricots, mango and passion fruit coulis, that tarry ash comes back in the finish with a slightly graphitic farmy note.
