Nose
Fermenting strawberries and raspberries, sweet rubbery notes, subtle smoke, savory Springbank funk, baking spices like nutmeg, cinnamon, and ginger. Charred wood and salty notes emerge with time.
Palate
Lots of berry and spice notes, characteristic funk and smoke, tart berry quality, distinct salt note, waxy, sweet beeswax. Thick and chewy mouthfeel, very winey, sweet then drying.
Finish
Notes of wax, raspberry, sweet barley and spices. Lingering cinnamon, raspberry, funk, and a wisp of wood smoke. Fairly long and warm, with sweet wax and barley notes. Some drying, tannic red wine notes, and a savory meatiness.
