Description

After establishing one of the World's leading whisky bars in Dornoch, Phil and Simon Thompson - better known as the Thompson Brothers - decided to take it a step further and start making their own whisky and gin on the site at the Dornoch Castle Hotel. Born from successful crowdfunding and a worldwide love of whisky, Dornoch's first whisky distillery was formed. While waiting for the whisky to mature, they created this Sutherland 5 Year Old Blended Malt 2023 Edition, a blend of 5-year-old Dornoch, older Clynelish (2014 and 2015 vintages), and a small amount of much older Brora (1982 vintage). It was bottled in 2023 at 48.5% ABV.

Nose
Old Cadenheads dumpy smell; copper coins, engine oil, old hessian rope, eucalyptus. Bucket of fermenting pineapple filled with wax and honey. Sage, chalk, dried hops, gorse, lemon drizzle cake. Very malty, with hints of wood, smoke, heather, moss, tree bark, lichen, and a certain crispness. A lot of seawater, brine, wax, paraffin, porridge, apple peelings, a little soot, and fruitier gueuze with peaches and cantaloupes.
Palate
Plenty of ripe fruits, apricot kernels, pineapple & pear. Madeira cake. Mystery smoke, lemongrass, bay and galangal. More wax, creme caramel and bitter chocolate. Huge amount of malt, dry barley and sharp notes of oak. Crisp, breezy coastal notes. Marram grass, straw, sand. Fatter and richer, saline, a little smoky, sooty, with an engine-oil side, earthy citrus, marshmallow grilled over a campfire, and pepper. Some kind of smoked toffee.
Finish
Medium long finish. Earthy. A bit of peat, but not in a smoky way. That green, earthy sort of peat. Subtle. Dunnage warehouse. Mild funk. Nectarine. A bit of licorice. Long finish, grain forward with a certain old fashioned highland quality. Rather long, still fat, on some kind of salted butterscotch with a salty aftertaste.
