Maritime with light spice-prickle, suggesting a beach bonfire of dry seaweed, deep-seated notes of maritime saltiness and marine engines, on a base of drying fresh linen. Also, wood fires, furniture polish, vanilla, lemon peel, and lemon juice. Gentle peat, sea brininess, and toasted grain.
Palate
Smoothly oily texture, gloriously sweet throughout and smoky-spicy, with a distinct fruity hint evoking an orchard seen through smoke and sea mist. A fine salty balance in the middle leads to a powerful chili pepper catch. Peppery and sweet, with a touch of tannin, lingering bonfire, sweet oak, dried fruit, and apricot. Oily, malty peat, vanilla, brown sugar sweetness, honeyed toast, apricot jam, and citrus hits.
Finish
Long, sustained and lightly smoky, with lingering warming spice. Peppery with a toffee sweetness. Gets more peppery (like a phenolic olive oil) and salty (crystals). Peat, ripe fruit, and a little brine.
