Description

After establishing one of the World's leading whisky bars in Dornoch, Phil and Simon Thompson - better known as the Thompson Brothers - decided to take it a step further and start making their own whisky and gin on the site at the Dornoch Castle Hotel. Born from successful crowdfunding and a worldwide love of whisky, Dornoch's first whisky distillery was formed. This Super Groovy Blended Spirit Drink is a combination of 19.4% Dornoch cask #0 (distilled 2017), 12.2% 10 year old Caol Ila (distilled 2013), and 68.4% of a blended malt distilled in 1969 that had dropped below 40% ABV. It was bottled in November 2023.

Nose
The nose opens with a little charred oak, coffee, barley sugars, eucalyptus, tinned peaches, icing sugar, and a bit of wholemeal toast. Time and air brings out stewed apple, a little cinnamon, French pastries and almond marzipan.
Palate
The palate begins with light caramel, vanilla essence, white pepper spice, cinnamon sugar and mellow bonfire smoke in the background. There's also green apple skin, lime juice, a little sea salt and buttery pastry.
Finish
The finish has a medium length with primarily bonfire embers and salted caramel.
