Description

After establishing one of the World's leading whisky bars in Dornoch, Phil and Simon Thompson - better known as the Thompson Brothers - decided to take it a step further and start making their own whisky and gin on the site at the Dornoch Castle Hotel. Born from successful crowdfunding and a worldwide love of whisky, Dornoch's first whisky distillery was formed. This extraordinarily long-aged blended Scotch whisky was distilled in March 1984 and matured for four decades in a single refill butt. Bottled in October 2024 at 40.4%, it is noted for its distinctive 'old-school' profile, with suggestions of a legendary Islay distillery from the 1980s. It was bottled without chill-filtration or added colour.

Nose
Vibrant and remarkably expressive for its age, with a floral bouquet of lavender, parma violets, and French perfume. Beneath lie waxed lemons, cream soda, a gentle, medicinal coastal smoke, hints of kiwi and nectarine, and an 'old warehouse' mustiness.
Palate
Light and silky texture, opening with orange sherbet and pink grapefruit, moving into menthol, eucalyptus, and green tea. Wispier smoke, like beachside botanical gardens and charred citrus rinds, with a curious savory edge of olive brine and salted caramel.
Finish
Long, soft, and sophisticated, leaving a drying sensation of ashy pepper, herbal tisanes, and a lingering floral sweetness, clean and bright without heavy oak tannins.
