Description

Part of Waterford Distillery's Single Farm Origin range, this Irish single malt whisky is created exclusively with 'Irina' malted barley harvested in 2016 from the Lakefield farm in County Laois. It underwent long fermentation and slow double distillation, followed by a 3 year and 7 month maturation in a variety of casks. This limited edition release is non-chill filtered and bottled at 50% ABV, showcasing a terroir-driven profile.

Fresh hay, lime zest, malted barley, and subtle white pepper, like a barley field right after rain. Warm custard, bread baking, red apple, milk chocolate, dried flowers, butter cream, pine needles.
Palate
Crisp and earthy. Green apple, lemon peel, herbal tea, and malt sugars play over a grain-rich backbone. Delightful notes of apple crumble, stewed rhubarb, and clove, complemented by subtle hints of baking bread, chocolate, and warm custard. A gentle clove to start that leads into proving bread & malted biscuits, with a pepperiness, honeydew melon & pears.
Finish
Long, clean, and dry. Hints of spice, green oak, and cereal sweetness fade with elegance.
