The rosemary-roasted walnuts and salted honey give this a savoury-sweet angle I find appealing, with the dark chocolate and cocoa nibs keeping it firmly rich. The tea reference comes only after reduction, but it adds an interesting turn to an otherwise very oak-and-chocolate-led character. The nose’s furniture polish sounds less inviting to me; still, the rosemary and that conditional tea note give it a little more to explore than a straight sweet bourbon profile.
