This Irish Single Pot Still has a lively contrast: melon and citrus peel on the nose, then espresso, cereal and light peat on the palate. The gingerbread spice adds a little spark without taking over. The long finish is the part that really holds my attention, with orange peel, lemon zest and dark fruits carrying the flavour onward. A spirited, layered character, and the finish gets the last word.
