Knob Creek Cask Strength 12 Year Old, 2026, 60.6%

87 / 100

Caramel and oak give this bourbon a clear, structured character. The palate adds vanilla, dried apple, and spice, which keeps the sweetness from being the only point of focus. The long, warm finish continues the caramel and oak, with cinnamon in the mix. That oak-and-vanilla direction suits my preferences, while the robust style sounds better suited to someone who enjoys a pronounced bourbon character than someone seeking something delicate.
