The sultana, raisin and candied orange peel appeal to my fondness for dried-fruit richness. Ginger and fresh oak give the sweeter palate some lift, while thyme brings a graceful herbal turn to the finish. The peppery oak may compete with the fruit for some, but I like that contrast.
