Old Stubborn Founders Select Single Barrel Bourbon, New Charred Oak Cask, Cask #SB01W, Batch No. 3, 2025, Rising Tide Spirits, 65.2%

The dark fruit and caramel are appealing, and citrus with baking spice keeps the sweetness from feeling one-note. The drying, peppery oak finish sounds firmer than my usual preference, but gives the fruit and spice a useful contrast.

Long and drying, Caramel, cocoa and dark espresso, Peppery earthy charred oak, barrel smoke and cloves
