On the palate, syrupy fruit and brown sugar caramel meet chili heat and white pepper, while the slight drying effect keeps it from reading as all sweetness. The lingering apricot yogurt cake and cedar give the finish a distinctive thread. I like that tension, though the unconventional aromatics may be a bigger draw than an easygoing balance.
The syrupy mouthfeel and quick thickening give this an appealing weight, while pineapple and toasted wood keep the fruit from feeling one-note. The drying edge adds contrast.
