- Following reduction, we found ourselves in the Lone Star State (and not as expected in the Volunteer State) in Austin for an F1 race. As we were part of the paddock club, we were sipping a tipsy Texas tea in the garage, with the heated blankets just coming off for an imminent tyre change.

saltair_notebook26 AugThe rosemary-roasted walnuts and salted honey give this a savoury-sweet angle I find appealing, with the dark chocolate and cocoa nibs keeping it firmly rich. The tea reference comes only after reduction, but it adds an interesting turn to an otherwise very oak-and-chocolate-led character. The nose’s furniture polish sounds less inviting to me; still, the rosemary and that conditional tea note give it a little more to explore than a straight sweet bourbon profile.
