Description

Released in April 2016, Irish Whiskey Academy Edition No. 2 is an exclusive single pot still Irish whiskey bottled for participants of the Irish Whiskey Academy at Midleton Distillery. Crafted from two ex-bourbon barrels (one second-fill barrel from 2004 and one first-fill barrel from 2005), personally selected by Master Blender Billy Leighton and Academy Tutor David McCabe, this limited 500ml bottling is non-chill filtered and bottled at 46% ABV.

Nose: Full of robust Pot Still Spices with a touch of light confectionary sweetness. Menthol combines with jelly fruit sweets and green tea to balance the peppery spices, freshly ground coffee and dark chocolate.
Palate: The initial rich full sweet mouthcoating, typical of Irish Pot Still Whiskey, develops from barley sugar to treacle toffee with a little heat from the Pot Still Spices. Then comes the succulent, slightly grassy, note of the barley grains complimented by the charred American white oak.
Finish: Long and sweet to the end where the barley stalks linger.

Sweet barley sugar and treacle toffee meet a proper kick of pot-still spice, while charred American oak adds a drier edge. That push and pull sounds right up my street: welcoming sweetness, with enough spice to keep things from getting too comfortable.
