Nose: Fresh and incredibly herbaceous. Hints of fruits bring softness. Light vanilla with yuzu and wet chalky notes. Something blossomy too. Just a hint of sandalwood and soft, sooty smoke in the background. Fresh orchard fruits, honey, and a hint of peat smoke, accompanied by subtle floral notes and a touch of spice.
Palate: Smooth, lively. The first palate is fresh and peppery. The mid-palate reveals soft and creamy pastry flavor while the subtle peat slowly fades. Initial sweetness of caramel and ripe apples, followed by the warming presence of vanilla and dark chocolate. Signature peaty undertone, hints of sea salt and a gentle smokiness.
Finish: Long, dry. Flavors of wetland balance the oaky aromas. Lingering impression of oak, dried fruit, and a delicate smokiness. Long and satisfying.

Ripe apple and vanilla bring a softer counterpoint, with dark chocolate adding depth. I like that the spice is described as lively rather than overwhelming; the gentle peat and smoke sit in the background instead of taking over. A balanced, appealing direction.
