The chocolatey malt gives this bourbon an interesting grain note, while sweet corn and toffee keep the palate rounded against the rye spice. I like that contrast: the malt character is there, but it shares space with pepper and oak rather than taking over. The finish continues with dry oak, cinnamon and orange peel, giving the sweeter notes a firmer edge. A lively, grain-led set of flavours.
